Cheesesteaks Piled a Mile High
Shredded Steak, Melted Cheese, Piled Sky High
Cheesesteak catering for events and offices, built to move a line fast.
Shredded steak browned on the flat top, caramelized onions, provolone, and our house-made cheese sauce, all loaded onto Amoroso rolls flown in from Philly. Every order is cooked to order, batch by batch, so your line keeps moving and every sandwich hits the table hot.
Our Story
Ten people, one love of cheesesteaks
Mile High Cheesesteaks didn't start with a business plan — it started with a conversation. We were looking to build a new concept when one of our team members couldn't stop talking about cheesesteaks after we all got back from an event together. The more we talked, the more we realized how much every single one of us loved them: filling, hearty, the kind of food that makes everyone at the table happy. We figured if we could take the passion of ten people and pack it into one truck, we'd have something worth building.
We do one thing: cheesesteaks. We're not juggling a menu of unrelated dishes or trying to be everything to everyone — we shred and season our steak, brown it on the flat top, layer on caramelized onions and provolone, and finish it with our own house-made cheese sauce, all loaded onto an Amoroso roll. Guests can go classic or try our own Colorado spin with green chili and aioli. Staying focused on the cheesesteak means we do it well, every single time.
Today, that same energy is what we bring to every event we cater. We care about simple food cooked well, and about giving every crowd — from graduation parties to game days — hot, melty sandwiches built for event service. It's still the same idea from that first day: a group of people who genuinely love cheesesteaks, sharing that with everyone in line.
Ten of us fell in love with cheesesteaks — so we built a truck to share that with everyone else.

How Service Works
How Mile High Service Works
We arrive 30-60 minutes before service and call ahead to park exactly where you want us. From there it's all self-contained — just give us a flat, level spot and we handle the rest.
Onions go on the flat top first since they take the longest, then our house cheese sauce gets heated low and slow. The steak hits the griddle last so every cheesesteak is built hot, fresh, and piled high — no kitchen, no cleanup, no stress on your end.
1
Arrival & Parking
We call ahead and park exactly where you need us, using just a flat level space.
2
Onions & Cheese Sauce
Onions caramelize first, then our house cheese sauce heats low and slow.
3
Steak Hits the Griddle
Shredded steak is seasoned and griddled fresh right before service opens.
4
Line Moves, Batches Flow
We cook in batches, restocking rolls and steak to keep the line moving fast.
5
Pack Up, No Cleanup
We break down and roll out — your space stays clear, no kitchen to clean.
People always comment on how close it is to the original — that nostalgia they haven't found anywhere else.
Your Booking Team
The People Behind the Griddle
We're the same crew who built Mile High Cheesesteaks from that first Philly-inspired flat top session — and we help plan your event's cheesesteak service around guest count, timing, and setup.
David
Senior Booking Agent
For hosts booking hot cheesesteaks for hungry crowds, David sizes the setup using numbers most caterers never touch — 1,500 meals a day for Chevron across 30 straight days, and roughly 1,200 meals a weekend keeping FedEx fed through Covid. Wiz over green peppers is non-negotiable for him, and if a griddle or truck component fails mid-event, he's ready to pivot to buffet service so melty sandwiches keep hitting the line. His push behind Colorado's statewide health and fire reciprocity bill also means less local red tape standing between your event and a cheesesteak setup that keeps the line moving.
Brandon
Senior Booking Agent
Brandon booked his first shifts back in 2003 at Red Robin, then Isle of Capri in Black Hawk two years later, working front-of-house, expediting, and banquet setup before hot, melty cheesesteaks became his focus — 12 years in food truck and catering logistics now, with 6 spent hands-on at the griddle. Amazon, Starbucks, the Denver Broncos, the Denver Nuggets, Southwest Airlines, Harvard, and Texas A&M have all had him behind the scenes, and his sharpest market read runs through Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco, where fast response and straight talk with our catering teams keep a cheesesteak setup that keeps the line moving. If a team's service, reviews, food, or presentation slip, he's quick to swap in another — and his advice for hearty handheld food for teams, offices, schools, and parties is always the same: keep the menu tight and let the griddle work fast.
Jess
Food Truck Booking Agent
Headcount alone won't tell you how many hot cheesesteaks a crowd will actually go through — Jess plans around demographic mix, vendor meals, and service style instead, a habit sharpened by 4 years working directly in trucks and kitchens across more than 8 cuisines. That approach held steady through a 5,000-guest Southwest Airlines event and a 5-day stretch prepping 10 trucks for 50 events and roughly 7,500 guests, each one loaded out with correct menu and inventory for griddled, filling, fast-moving food. She rounds things out by checking insurance, safety compliance, references, and fire-risk gaps ahead of time, so cheesesteak service for your event starts strong and stays that way.
John
Food Truck Booking Agent
When it's time to lock in a hot cheesesteak setup, John starts with guest count, service speed, and setup style, then handles the permitting, parking, COIs, and timing that keep event day on track — a habit built through permit and fire inspection work in Denver and carried into Los Angeles, Orlando, Miami, Sacramento, Washington, DC, and other major markets. He's the reason a griddled, filling menu still showed up hungry-crowd ready in Ontario after a trailer's tow vehicle lost a radiator hose on the highway: John got a replacement truck rented, kept things moving, and had the client rebooking him the following year.
Kaleb
Food Truck Booking Agent
When a wheel bearing snapped on one of our catering trucks en route to a booking, Kaleb had a substitute rolling in under 20 minutes, keeping hot cheesesteaks for hungry crowds on schedule without a hiccup. That same backup coordination is what let him shift a 200-guest wedding from buffet to food truck service with just 30 minutes' notice, and it's the standard he holds for melty sandwiches built for event service. Kaleb won't greenlight a cheesesteak setup until he's confirmed current fire extinguishers, valid health and fire licenses, and coolers that are labeled and organized — because a griddled, filling, fast-moving menu only works when the fundamentals are already locked down.
Simon
Food Truck Booking Agent
Simon's decade in catering runs deep, split between 7 years working trucks directly and 3 years leading prep kitchens that stocked up to ten trucks a day for hundreds of hungry guests. That volume experience carries over to hot cheesesteaks for hungry crowds, from recurring Southwest Airlines service for about 1,200 employees per event to brand work with Kroger, Amazon, and FedEx, plus a fall festival that jumped from roughly 100 guests to nearly 300 and had him driving back for extra inventory rather than let ticket times slip. His fire-safety knowledge and eye for a griddled, filling, fast-moving menu shape how he helps plan a cheesesteak setup that keeps the line moving.
Stephen
Food Truck Booking Agent
A dozen-plus food trucks and a stint helping run a 12-truck operation taught Stephen what hot cheesesteaks for hungry crowds actually take to pull off — he's organized corporate events past 1,000 guests, prepped over 3,000 meals in a single day, and once built a next-day event from a cold request in under an hour. When a catering truck's trailer hitch failed, he got a re-hitch crew out fast enough to still roll into service 50 minutes early, the kind of instinct that keeps a griddled, filling, fast-moving setup on schedule. His standing advice for hosts: two entrées keeps the line moving without slowing down the melt.
Thomas
Food Truck Booking Agent
Thomas won't clear a cheesesteak truck for hot cheesesteaks for hungry crowds until COIs, permits, insurance minimums, and past performance check out against Denver Department of Public Health & Environment and Denver Fire Department standards. He wants sturdy rolls and a griddle setup that can actually keep melty sandwiches built for event service, and his eye for the details paid off when a mid-event generator shutdown turned out to be a low-oil cutoff — a quick top-off and a cheesesteak setup that keeps the line moving was back in action within minutes. His take for hosts: plan the service flow, not just the menu.
Zo
Senior Booking Agent
Zo has run trucks, smokers, and kitchens directly for about 16 years, and that operator mindset now drives how he books hot cheesesteaks for hungry crowds. His track record includes overseeing thousands of catering and food truck events, plus a standout day managing eight large holiday events at once with a minimal crew, and prior work alongside Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff. Culinary degree and ServSafe certified, he insists on prime meats and fresh prep for a cheesesteak setup that keeps the line moving, all while staying sharp on Douglas County and Castle Rock fire expectations.
